Nacho’s

I’m sorry for not posting in a while. Blogger hasn’t been working properly for me, so anything I’ve done has been deleted. I love taco’s and I love taco chips and I love Nacho’s. I really like the saltiness of the taco chips. I make them quite often, nacho’s, but I made these ones differently.

I put a bean dip on top as well as salsa. After the two I put on feta cheese and in the microwave it went. The bean dip and feta went so well together. The nacho’s tasted fantastic dipped in plain yogurt (with some chives on top). Delicious. A perfect summer lunch. With some Olde Time lemonade that my sister made.

Cupcakes and Icing

I needed to quickly make 2 dozen cupcakes, so why not use a cake recipe? I used a nice moist chocolate cake recipe (will include soon) and for the icing, an adaption from vegan buttercream. I loved the chocolate against the creamy colour of the buttercream icing. Not only were the colours beautiful together, they tasted fantastic together. I often find buttercream is too heavy in the summer, as well as cream cheese, so this vegan buttercream was fantastic. Nice and light next to the chocolate cake. And they look elegant, I think.

Ice Cream Pie

The pie didn’t turn out quite as I had hoped, just because it was too hot and the ice cream melted. I was dissapointed, but I think I would make it again when its not so hot out. The recipe will come soon. With the summer here in full bloom, what is your favorite dessert?  

Banana Split

In the heat of the summer it’s great to feel like a 5 year old again. Scooping out the vanilla icecream into a bowl, hoping it won’t melt vefore I’m through with it. Dropping walnuts and chocolate chips on top as well as putting the chopped up banana on the side. As simple as it is, it’s gorgeous. It just seems like summer. I just wish I had some m&m’s and some butterscotch chips on top. If you notice I have full walnuts on my icecream. We had no chopped ones handy, but having full ones on top were delicious. Chicken and Caesar Salad

The perfect summer dinner. Roasted chicken in the grocery store, some french bread, and a toss together caesar salad. A nice light mix. And the house doesn’t get hot (big points scored there). The flavours of the three together have always reminded me of summer. It’s a meal that doesn’t make anything hotter than it already is.

A beautiful, simple meal. I hope summer is going well for everyone. Enjoy.

Farmer’s Markets and Apple Pie

I love when summer comes. You can tell in the air and in the surroundings. Flowers start blooming

 it rains instead of snows, and the farmer’s market comes out. That’s probably one of my favorites. The farmer’s market. Throughout the summer fresh fruits and vegetables are available, homemade baskets, mini doughnuts, and the hats. I love all the different colours of hats at farmer’s markets. The pinks and purples and yellows and reds. They reflect the business of the market. It’s a soothing experience. Our local farmer’s market just opened up for the summer, and the homemade pies looked were amazing.
We got an Apple pie and some cherries. The pie was delicious. As soon as I opened the box, the warm aroma of apples and spices flew at me. Literally. The apples were soft and crisp at the same time, with a beautiful meld of spices. What would normally make a nice, warm, winter snack, became my night time summer snack. The pie crust was nice and flaky but still thick enough to hold the pie. I love pie crust, and this one made number 2 on my list. What’s your favorite farmer’s market sense?

Daddy’s Favorite Chocolate Cake

This is a great birthday cake and Father’s Day Cake. It’s one of the few desserts my dad loves, so I love it. With Father’s Day approaching why not make a cake? With whipped cream? and strawberries?

Daddy’s Favorite Chocolate Cake
Family Recipe

1 3/4 cups flour
2 cups sugar
3/4 cups cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup rice milk*
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water

Beat all ingredients at medium speed for 2 minutes. Add boiling water. Pour into greased and floured pans. Bake at 350 degrees F. for 30-35 minutes. 

Side Notes
*you can use milk or water as well. Expect the batter to be runny. I use a bunt pan, you may need to lengthen the time if you use a normal cake pan. And don’t forget to make the whipped cream! Enjoy.

 I made cinnamon buns on the weekend. Cinnamon Buns with yeast. It was really exciting…they turned out perfectly. I use The Pioneer Woman’s recipe from her book and they were delicious (although she rolls hers really tight). I made a half recipe and got 12, her half recipe would have made around 20. They were ooey gooey goodness. I ended up baking them 15 minutes longer than called for because of the altitude (higher).  

I also found that there was too much icing. Not that it tasted too sweet, but that it soaked through the bottoms. I can’t say I can complain, though. They were fantastic. (I hope to get the recipe up on my blog, or a link to it, soon).
